Wine Review: This dark ruby colored Cabernet Sauvignon from Pax opens with a menthol and red raspberry bouquet with hints of red licorice and maraschino cherry. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, round, very bright and fresh. The flavor profile is cedar and red licorice blend with notes of red plum, cherry, and cinnamon. We also detected some hints of blackberry, toasted coconut, malt, and a touch of celery. The finish is dry, and its moderate tannins linger and drift away nicely. The Tasting Panel would pair this Cab with beef carpaccio. Enjoy – KWGTP

Winemaker Notes: Bright and effusive summer fruits with the telltale broodingly dark flavors of leather, black cherry, mocha, dusty green olive that can only come from the shallow rocky soils of downtown St Helena. This tastes like stepping into a time machine and relishing a Napa Valley Cabernet Sauvignon on release in the early 1970s. Rich and seductive with the classic perfume of menthol and herbs. Sweet black cherry, tobacco and just a suggestion of tannin that bring you back to the present day.
