Wine Review: This pale straw-colored Riesling from Dr. Pauly opens with thousands of mini micro bubbles that dissipate quickly. This wine opens with a yellow grapefruit bouquet with hints of ginger and lime. On the palate, this wine is slightly sweet, slightly acidic and a little round. The flavor profile is a honeycomb and ginger blend with notes of lime and minerality along with a touch of peach pit in the background. The finish remains off-dry and its flavors drift away nicely. This Riesling would pair well with sweet and sour chicken. Enjoy - Ken
